Mein friends, you know from my last blog that I love a good hotdog, but with summer cookouts zee food can become a bit predictable. Right now is zee perfect time to try out a tasty sausage. Just as I explained with hotdogs (und as I explained in last year’s Summer of Zee Encased Meat, grilling zee perfect sausage is an art. But after reading these tips, you’ll be ready to serve up some delicious encased meat!
Types of sausage
Just like wine, sausages come in a variety of types und flavors. I will recommend two of zee most popular:
Bratwurst This is a German sausage, made up of pork und veal. This spiced sausage is often not pre-cooked, so be sure to know what you are buying und cook well. As you may have guessed, this is one of mein favorites.
Italian Sausage This is a favorite for many cookouts, und there are two types (sweet or spicy). These pork links are usually very plump und must be cooked well.
Grilling methods
While most people just toss zee sausage on zee grill, there are actually several methods to consider for grilling your sausage to perfection. Some like to split zee sausages und grill them. This allows zee meat to lay flat on zee grill ensuring it is thoroughly cooked, but your meat will dry out much faster once zee case is split. I do not recommend this method.
Another great method is to boil zee sausages before grilling them. Simply bring some water to a boil und cook zee meat for a few minutes before switching to zee grill. You can also add beer to zee water to give it extra flavor. Boiling works very well for sausages that are not pre-cooked.
Of course zee final method is zee grill. If you are using uncooked sausage be sure to cook on medium heat to avoid flair ups. High heat will sear zee casing und zee center will remain uncooked. When flipping your sausages, be sure not to puncture zee casing, as this will cause zee meat to lose its tasty juices.
Toppings
All sausages go great with grilled peppers und onions. I love to put tasty sauerkraut over mine. Keep zee traditional toppings – ketchup, mustard, raw onions, relish – handy for your guests. I usually avoid chili because it overwhelms zee flavor of zee sausage.
