1 lb. pork tenderloin
3 cloves garlic
2 teaspoons fresh rosemary leaves
1 cup Riesling wine
¼ cup balsamic vinegar
2 teaspoons Dijon mustard
2 tablespoons olive oil
Vegetable oil
Preheat your oven to 350. In a small saucepan reduce the Riesling down to about three tablespoons, until it’s quite thick and syrupy. Remove the pan from the heat, allow it to cool, then add the garlic, rosemary, vinegar, mustard, olive oil and salt and pepper.
Season the pork with salt and pepper on both sides. Coat the surface of a sauté pan with an oven-proof handle lightly with the vegetable oil and heat the pan over medium-high heat. When the pan is hot, add the pork and sear for one minute. Turn the pork slices and sear for 30 seconds more. Remove the pan from the heat, pour the glaze over all and put the pan in the oven for 6-9 minutes, or until a thermometer inserted into the medallions reaches 140 degrees. Serve the medallions on plates with the sauce spooned over the top, along with glasses of remaining Riesling wine.
